Place the turkey in the basket with legs pointing down. The more vertical the turkey, the better.

 

 

 

Insert thermometer into thickest part of the breast. Rule of thumb - allow 10 minutes cook time per pound for poultry and 25-30 minutes per pound for thick meats. Always use internal temperature to make sure meat is done.

 

 

 

With regulator properly connected to tank valve, lower basket into Big Easy. Light the Big Easy according to the lighting instructions.

When internal temperature reaches 180F, turkey is done.

 

 

 

 

Turn the Big Easy and tank off and remove the turkey basket with Lifting Hook.

Look underneath the unit and make sure valve is inside the burner.

Remove the Cooking Pot. Make sure the spark gap is approximately 1/8" from burner. When rotary ignitor is turned, make sure there is a prominent visible blue spark when knob is turned.

My Big Easy Turkey Fryer burned my food while cooking. How can I prevent that?

 

Sometimes, when food is cooked to internal temperature, the outside may have a burned appearance while the inside is moist and tender. To reduce the outside of the meat having a burned appearance follow these tips:

 

       Be sure the cooking chamber has been well seasoned. Seasoning will result in the stainless steel pot turning a dark brown which will optimize cooking performance. To season the cooking chamber, wipe down inside surfaces with cooking oil and allow the unit to burn on high for 15 minutes or until the unit stops smoking.

 

       Be sure the food is centered in the Roaster Basket as much as possible. If the food leans too much to one side, it may burn the side closest to the inner wall.

 

       Rubs containing high amounts of sugar sometimes contribute to the burned appearance.

 

       Do not use the lid while cooking. The lid is to prevent debris from getting inside the unit during storage. The lid will reflect the heat back into the cooking chamber and will result in blackening.

 

       Be sure to use the meat thermometer to determine doneness rather than time estimates to eliminate the potential for overcooking.

 

       Removing poultry at a lower temperature will reduce blackening. A recent revision to the USDA recommended safe minimum internal temperatures indicates that the new doneness temperature for poulty is 165 F instead of 180 F as noted in the product literature and meat thermometer.

My Big Easy Oil-Less Turkey Fryer is cooking slower than expected

 

 

1.   You may have a low flow issue with your regulator. Since 1995, all regulators (the part that attaches to the gas tank to regulate the flow of gas) have included a safety device that restricts the gas flow in the event of a gas leak. But, you can inadvertently activate the safety device without having a gas leak. This occurs when you turn on your control knob before you turn on the LP tank valve. If you do activate the gas regulator safety device, the Big Easy Oil-Less Turkey Fryer will not reach ideal temperatures. To reset the gas regulator safety device:

 

       Turn off the knob on the control panel in front.

       Turn off the tank knob.

       Disconnect the regulator from the LP tank.

       Wait 30 seconds.

       Reconnect the regulator to the LP tank.

       Slowly open the LP tank knob all the way open. Do not put excessive force on the valve at the full open position to avoid damaging the valve.

       Turn on the control knob and light per the instructions on the control panel.

 

2.   High wind and cold temperatures will extend the estimated cooking time. Try moving the cooker to an area with less exposure to the wind.
